Why the multiply-and-add works
2 3/4 means two wholes plus three quarters. Each whole contains four quarters, so two wholes contain 2 × 4 = 8 quarters. Add the three extra quarters and you have 11 quarters in total — 11/4. The denominator never changes because the size of the pieces never changes; only how you group them does.
